Vinification: White vinification, without special technical interventions, in order to preserve the original quality potential of the grapes and their territorial character; fermentation at a controlled temperature (approximately 15°C)
Aging: Aged in temperature-controlled stainless steel tanks for 7–8 months, resting on fine lees
Organoleptic Characteristics
Color: Straw yellow
Aroma: Intense bouquet of peach, melon, and lime, with pronounced hints of mint
Taste: Fresh, mineral, savory, harmonious, and persistent
Alcohol Content: 12.5% Vol.
Food Pairing: Dishes based on fish and shellfish. Also excellent as an aperitif
Serving Temperature: 8 – 10°C

CHARDONNAY

Grape variety: 100% Chardonnay
Production area: Sicily – Alto Belice
Soil and exposure: medium texture tending towards clay; favorable exposures to east/west
Training system: espalier with guyot pruning
Climate: Mediterranean with mild winters and hot, dry summers, with strong temperature variations between day and night temperatures
Harvest: September
Vinification: in white, without particular technical precautions, in order not to alter the original qualitative potential of the grapes and their territorial expressions of origin; fermentation at controlled temperature (around 15°C)
Aging: in temperature-controlled stainless steel tanks for 7/8 months, where it rests on the noble lees
Organoleptic characteristics
Color: straw yellow
Aroma: intense hints of citrus and tropical fruits, with notes of freshness of mint and white flowers
Taste: medium-bodied, fruity, savoury and elegant, persistent on the palate
Alcohol content: 13% Vol.
Food pairing: delicate foods, fish-based dishes and slightly mature cheeses
Serving temperature: 8 – 10°C.

ORGANOLEPTIC CHARACTERISTICS
Colour: bright straw yellow, with marked greenish reflections
Aroma: broad and distinctly floral aroma, echoing scents of white flowers and Mediterranean citrus fruits with faint hints of pear
Taste: fresh, dry and harmonious taste and the structure is very respectable with a balanced flavor.
Alcohol content: 13.5% Vol
Food pairing: fish-based dishes, vegetables, white meats and spicy cheeses
