Soil and exposure: medium texture tending towards clay; favorable exposures to east/west
Training system: Counter-espalier with guyot pruning
Climate: Mediterranean with mild winters and hot, dry summers, with strong temperature variations between day and night temperatures
Harvest: September
Vinification: in red with maceration on the skins for about 10 days; fermentation at controlled temperature (22/25°C)
Aging: 75% in thermo-conditioned stainless steel tanks for 18/20 months and the remaining part for approximately 8/10 months in 25 HL French oak barrels
Organoleptic characteristics
Color: intense ruby red with purple reflections
Aroma: enveloping aromas of red fruit, plum, cherry, currant and blueberry
Taste: pleasant and balanced, harmonious, persuasive, well structured and dry
Alcohol content: 13.5% Vol
Food pairing: red meats, roast beef, boiled meats, roasts and mature cheeses
Serving temperature: 16 – 18°C.

SYRAH

NERO D’AVOLA

Grape variety: Nero d'Avola 100%
Production area: Sicily – Alto Belice
Soil and exposure: medium texture tending towards clay; favorable exposures to east/west
Training system: espalier with guyot pruning
Climate: Mediterranean with mild winters and hot, dry summers, with strong temperature variations between day and night temperatures
Harvest: August
Vinification: in red with maceration on the skins for about 10 days; fermentation at controlled temperature (22/25°C)
Aging: 75% in thermo-conditioned stainless steel tanks for 13/15 months and the remaining part for approximately 6/8 months in 25 HL French oak barrels
Organoleptic characteristics
Color: intense ruby red
Aroma: cherry and plum aroma with notes of aromatic herbs (rosemary)
Taste: structured, warm flavour, with well-modulated acidity and powerful structure, rich in balance and intensity in perfect harmony
Alcohol content: 13% Vol
Food pairing: red meats, game, meat sushi and mature cheeses
Serving temperature: 16 – 18°C.
